Ingredients (5 Personnes):
4 c.à.b épices briani Quraisha,1 ½ tasse de lait caillé, 1 pincée de zaffran/ colorant jaune,1kg d’oignons, 250gm de petit pois,25gm menthe fraiche (hachés), 25gm de feuilles de coriander,5 gros piments verts, 1kg pommes de terre,1kg de viande rouge/poulet/poisson, 1kg de riz basmati, 1tasse d’huile de cuisine, 2c.à.b de mentègue.
Préparation:
- Faites frire les d’oignons dans un mélange de mentègue et l’huile de cuisine et ensuite les pommes de terre entière .
- Coupez la Viande/poisson/ poulet en morceaux; placez dans une marmite et ajoutez le lait caillé ,l’épice briani et mélangez bien. Ajoutez le mélange de mentègue et l’huile pour friture.Ajoutez aussi la moitié des oignons frits et du sel comme requis. Laisser macérer pendant 30 minutes.
- Ajoutez de la menthe fraiche et feuilles de corriandre et les gros pimets verts. Ajoutez les pommes de terre et la moitié d’eau chaude zaffrané. Mélanger bien de nouveau.
- Faites bouillir le riz jusqu’à ce qu’il soit à moitié cuit, et mettez une couche de riz sur le mélange de masala dans la marmite;arrosez un peu d’eau zaffrané, suivi d’une partie d’oignons frits;
- Placez le couvercle sur la marmite qui doit être hermétiquement fermée. Si le convercle est trop léger, placez un objet lourd dessus. Mettez la marmite sur le feu jusqu’à ce que la vapeur en sort. Réduisez le feu et laissez cuire pendant environ 30 minutes.
- Enlevez le couvercle et Vérifiez avec une cuillère si le briyani adhere au fond. Replacez le couvercle et laissez cuire à petit feu pour 10 minutes encore.
- Servez chaud, avec du riz en dessous et le masala en haut. Savourez votre briyani et rassurez- vous que vous ayez votre epices briyani en reserve pour la prochaine fois.

5 Tbsp briyani spices, 11/2 cup yogurt, 1 pinch zafrran/ yellow coloring(dissolved in a cup of hot water), 1kg onions(peeled & sliced), 250gm peas, fresh mint (chopped),25gm fresh coriander (chooped), 5 green chillies, 1kg potatoes, 1kg red meat/chicken/fish, 1kg basmati rice, 1 cupful cooking oil, 2tbsp clarified butter(ghee).
Preparation:
- Fry the sliced onions in a micture of ghee and cooking oil until brown in color. Fry the potatoes (whole) for 2 to 3min in the same mixture of ghee & oil.
- Cut the meat/chicken/fish in cooking untensil and add yogurt, spices briyani and mix througly.
Add the mixture of ghee and oil (used in frying) and half of the fried onions, Add salt as required and allow to macerate for 30 minutes.
- Add the chopped fresh mint, coriander and green chillies (whole). Add the potatoes and half of the zaffran/yellow colouring water. Mix well.
- Boil the rice separately till half- cooked and place a layer of rice on the masala mixture in the cooking utensil: spray zafrran/ yellow coloring water on top of rice and sprinkle part of fried onions; repeat the same process with the remaining of rice, zaffran water and fried onions.
- Place the cover on the cooking utensil which should be alright. If cover is too light, place heavy object on top. Place the cooking utensil on the fire until water vapour starts coming out. Then reduce the intensity of the fire and allow to cook for about 30 minutes
Remove the cover and use a spoon to check whether part of the briyani adheres to the bottom of the utensil, which indicates that cooking has been completed. If not, replace cover and allow to cook (on a small fire) for another 10 minutes.
- Serve warm and while serving place the rice (top) part first and then add the massala (bottom) part on top. Enjoy your briyani and remember to keep your spices for Briani Quraisha in stock for next time.
