Ingredients (6 Personnes):
5 cuisses de poulet + 1 poitrine de poulet (coupé en morceaux), 3 pommes de terre pelées (coupées en gros cubes), couleur juane, 1 c.à.c tiges de safran orientale (mélangés dans 2 tasses d’eau chaude), huile de friture, 1 tasse yagourt, 1 tasse feuille de coriandres hachées, 1 tasse menthe hachés.
List A: 1 c.à.b pâte de gingembre,5 c.à.b épices kalia, 1 tasse oignons frites, sel selon votre gout, ¼ c.à.s épice garam masala.
Préparation:
- Ajouter liste A dans le poulet, mélangez bien pour enduire le poulet avec les épices et laissez mariner pendant au moins 1 heure.
- Ajouter du sel et une pincée de couleur jaune pour les pommes de terre. Mélanger et faites frire les pommes de terre à feu moyen, jusqu’à ce qu’il soit doré. Egouttez sur du papier absorbant et les mettre de côté.
- Chauffer 1 c.à.b d’huile (de l’huile utilisée pour frire les pommes de terre) dans une marmite anti-adhésive. Ajouter le poulet marine, remuer et laisser cuire à feu moyen pendant 5 minutes. Mélangez à chaque 1-2 minute.
- Ajoutez les tasses saffran-eau (et maintenant l’eau doit être jaune). Cuire pendant 2 minutes à feu moyen, puis abaisser la chaleur. Couvrir et laisser mijoter pendant 15 à 20minutes. Ajouter les pommes de terre et mélanger.
- Si vous voulez plus de sauce, ajouter un peu plus d’eau. Ajouter le yaourt et mélanger. Couvrir et laisser cuire encore 5 minutes. Ajouter le feuilles de coriander, feuilles de menthe et mélangerr.
- Servir avec du riz ou du pain.

5 chicken thighs + 1 chicken breast (cut in bite size), 3 peeled potatoes (cut in big cubes), a pinch of yellow food powder, 1 tsp tint saffron threads (mixed in 2 cups of hot water), cooking oil for frying, 1 cup chopped coriander leaves, 1 cup chopped mint leaves.
List A: 1 tbsp garlic paste, 1tbsp ginger paste, 5 tbsp kalia spices, 1 cup fried onion, salt to taste, ¼ tbsp garam masala spices.
Preparation:
- Add list A to chicken, mix well to coat the chicken with spices and let marinate for at least 1 hour.
- Add salt and pinch of yellow powder to the potatoes. Mix and deep fry the potatoes over medium heat until golden brown.
Drain on kitchen paper and set aside.
- Heat 1 tbsp of oil (from the oil used to fry potatoes) in a non-stick utensil.Add the marinated chicken, stir and cook over medium heat for 5 minutes. Stir every 1- 2 minutes.
- Add the 2cups saffron-water (by now the water should be yellow). Cook for 2 minutes over medium heat and then lower the heat. Cover and simmer for15- 20 minutes. Add potatoes and mix.
- If you want more sauce, add some more water. Add yogurt and mix. Cover and cook for another 5 minutes. Add coriander-mint leaves. Mix, cover and turn off heat.
- Serve with rice or bread.
